Biryani refers to a number of Middle Eastern and Indian dishes made with spices, rice, and meat with a nice creamy yogurt sauce. This recipe swaps the meat for shrimp and veggies, and you can make it more or less spicy.

Instructions

Step 1
Prepare the rice according to package instructions, eliminating any fat. chop the onion, mince the garlic and ginger. Cut the potato into roughly 1 inch by 1 inch cubes, leaving the skin intact. Peel the carrot and roughly chop.
Step 2
Heat the oil in a large pan over medium-high heat. When hot, add the onion and cook for about 5 minutes. Once the onion is translucent, add the ginger and garlic, and stir together. After about 1 minute, add the dry spices, stir to combine and cook for about another minute.
Step 3
Add about 1 cup of water to the pan, then add the potatoes and carrots. Bring the mixture to a boil, then reduce the heat and let simmer for about 10- 15 minutes, or until the potatoes are tender when pricked with a fork.
Step 4
About 5 minutes before the potatoes are done cooking, add the shrimp. Stir after 2-3 to cook evenly on both sides. At the end of the cooking time, there should be little to no water remaining.
Step 5
Stir the peas and tomatoes into the vegie mixture and warm through (no more than a minute or two). Remove the pan from the heat and add the rice and yogurt. Mix everything together well.
Step 6
Serve the biryani topped with cilantro and jalapeno, if desired.
