Ingredients
2 servings
1 lbbeef stew meat
chuck roast or other large cut of meat from the shoulder or rear
1yam
medium-sized, peeled and cubed
1onion
medium, diced
3tomatoes
medium-sized, diced
5 clovesgarlic
minced
1 inchginger
piece, minced
1habanero peppers
optional
1carrot
sliced
1beef bouillon cube
2 cupsbeef broth
¼ cupolive oil
or cooking
1 teaspoonsalt
Instructions
Step 1
1. Cook garlic, onions, and beef in oil in a large pan until meat is fully cooked.
Step 2
2. Add tomatoes, bouillon cube, and salt and simmer for 5 minutes.
Step 3
3. Add 2 cups broth and bring to a boil.
Step 4
4. Add yam and cook for 15 minutes or until tender.
Step 5
5. Stir frequently and add water or broth as needed.
Step 6
6. Serve hot.
