Instructions

Step 1
Start by peeling and removing the root from your onion. Slice into evenly sized pieces.
Step 2
Heat a non-stick skillet over medium high heat. Add one tablespoon olive oil.
Step 3
Once the oil is hot, add the onions and begin stirring them.
Step 4
Reduce the heat to medium, and season with a small pinch of salt. Add the butter.
Step 5
Option to add 2 tablespoons of red wine to prevent the onions from drying out in the pan. Be sure to cook off the alcohol.
Step 6
Stir frequently until the onions are soft and dark brown in color.
Step 7
Slice the baguette in half at the center. Then, slice the two halves length wise so you end up with four, 6-inch halves.
Step 8
Drizzle the inside of the baguette with olive oil and fry in a hot pan until golden brown on the inside.
Step 9
Remove from the heat. Set aside.
Step 10
Smear about one tablespoon of sheep goat cheese over the inside of warmed golden toast.
Step 11
Layer on some of the caramelized onion.
Step 12
Sprinkle with fresh thyme and cracked black pepper.
