The Fat Pastor's Tuscan Orange Salad

My wife says this is her favorite salad of all time. She hates when I make this salad for guests, because she wants to keep it all for herself. It's incredibly bright, delicious on a hot summer day. Instructions
Step 1
Begin by zesting the oranges and segmenting them into supremes. Squeeze out any remaining juice from the skeleton of the orange after segmenting, and add juice and zest to a bowl for the salad dressing
Step 2
Zest the lemon into the bowl for salad dressing, and juice the lemon into the bowl as well.
Step 3
Add the olive oil to the bowl for salad dressing, along with the salt and pepper. Whisk well to combine and set aside
Step 4
Combine the spring greens with the orange supremes, red onion and kalamata olives. Just before serving, mix the salad dressing in well. Enjoy!
