Simple Gochujang Teriyaki
The basic idea is that you make the teriyaki base with equal parts tamari (or soy sauce), mirin, and brown sugar. Then you add Gochujang to taste. You may add additional seasoning to taste, such as garlic.
I like to use tamari and mirin because it has a stronger and smoother flavorful profile than soy sauce. It's why I also use brown sugar; the molasses in brown sugar helps prevent the teriyaki base from being too sweet. And I like to add a spoonful or so of Gochujang paste, just enough that I can taste it without it overpowering the teriyaki flavor.
