My boyfriend isn't a fan of sushi, but loved this! I found many varying versions on TikTok and played with the different variations and ratios (ounces and cups to grams, always a challenge 🫣). This is the result of comparing different variations of the recipe and making it my own.
It was a hit and will definitely be repeated!

Step 1
Preheat the oven to 200°C

Cook the sushi rice according to the instructions on the package. When done, season to taste with rice vinegar and sesame oil.

Season the salmon with salt, pepper and paprika. Bake at 200°C for 10-15 minutes.

In a bowl, shred the surimi sticks and mix this together with the cream cheese, Kewpie mayo and Sriracha. Add the salmon and mix this through.

Step 5
Add the rice to an oven safe dish and flatten it. Top it with some furikake. Add the fish mixture on top. Put the dish in the oven at 200°C for about 10-15 minutes.

Add a drizzle of Kewpie mayo (and Sriracha, if wanted). Serve with scallions, avocado and nori.
