For the chicken mixture

3 teaspoonsolive oil

450gchicken
minced

1onion
diced

2cloves garlic

8mushrooms
sliced

1 teaspoonfresh rosemary
chopped, or thyme

salt

Instructions
Step 1
Preheat oven gas mark 7. Prepare vegetables coat in olive oil and season to taste. Place on a baking tray and cook in the oven for 40-45 minutes or until softened.
Step 2
Heat olive oil in a pan, cook onion until softened. Add garlic and cook for 1 minute more.
Step 3
Add chicken, mushrooms, salt, pepper, and herbs and continue cooking until chicken is cooked through.
Step 4
Prepare the couscous as per the instructions on the packaging adding 1 stock pot to the water.
Step 5
Once couscous is ready add chicken mixture and combine.
