Instructions

Step 1
Peel the cucumber, artisically leaving thin little strips of the peel on the cuke, because you have style. Slice in half longways, scoop seeds and dice the rest into bits that are about the size of the edamame beans.
Step 2
Prepare the edamame according to the package directions. Cool completely in an ice bath.
Step 3
Snip green onion tops and mix cukes, edamame, and green onion tops in a bowl.
Step 4
Mix the rest of the ingredients thoroughly and spill entirety into the green stuff.
Step 5
Refrigerate for an hour to let everything come together.
Step 6
Eat solo or put it on a bed of 2-3oz of mixed greens.
