i was gifted these boys by my roommate who got them from a friends farm in upstate ny
ngl they were kinda bitter raw but holy cow i cooked these were so tender and the texture was soft but had the right amount of give this recipe looks easy but it packs substance
these r perfect served w some rice and other banchan, it’ll be a nice companion to a meaty/protein filled main

1. Slice eggplants into juul sized pieces

2. Chop scallions and fry in 1 tbs of olive oil until they’re kinda see thru

3. Add eggplant, add garlic and toss to coat,

4. add oyster sauce and gichujang, toss to coat
Step 5
5. add pepper, sesame oil and sesame seeds, toss to coat
Step 6
6. add more salt if needed (taste first!)

7. garnish with scallions
