Swedish sausage dish with pumpkin

It's a bit timeconsuming, but it's a good dish for getting vegetables in picky kids.

Instructions

Step 1
Cut the potatoes into bite-sized pieces and boil them until tender in lightly salted water. Save 2-3 dl of the cooking water.
Step 2
Put the oil in a sauté pan or wide pot, and fry the onion and pumpkin together for 3 minutes over low/medium heat, so that the onions become clear.
Step 3
Turn up the heat a little. Add the rest of the vegetables and the sausages, and let them fry for 2-3 minutes, until they have taken on colour.
Step 4
Add tomato paste, approx. 2 dl boiling water and then 1 tbsp. ketchup at a time. Add the remaining ingredients.
Step 5
Let the dish simmer for approx. 8-10 min, until the sauce has boiled down a bit. Adjust the consistency with the cooking water from the potatoes. If your ketchup is quite sweet, add a few drops of vinegar to the recipe and you will create a flavor balance in the dish.
Step 6
Serve the dish with a sprinkling of fresh chives.
