1 lbground beef
⅔ cuprolled oats

½ tspcelery seed

Instructions

Step 1
Heat the olive oil in a large skillet over medium-high heat. Add the celery and sauté for 10-15 minutes until the celery begins to soften and look translucent. Set aside.
Step 2
In a medium saucepan, melt the butter then sprinkle in the flour while whisking to avoid lumps. Stir in vegetable broth and coconut milk, whisking until smooth, about 1-2 minutes.
Step 3
Add all the spices and bring to a simmer. Cook for 3-5 minutes until it begins to thicken. Add the sauteed celery and cook until heated through.
Meatballs
Step 4
In a medium mixing bowl, combine all ingredients for the meatballs until uniform. Shape meat mixture into balls. It should make about a dozen.
Step 5
In a large skillet, heat oil over medium high heat. Once heated, add meatballs, frying for 1-2 minutes each side, until browned and cooked through.
Step 6
Turn heat to low, then mix in the gravy, cooking for 20-25 minutes until thickened. Serve over rice.
