Ingredients

15 ouncecan black beans no salt added
rinsed and drained

1 cupquinoa
cooked, red or tri-color

1 cupfresh corn
or frozen

1red bell pepper
small, chopped

1 cupfresh mango
chopped

¼ cupred onion
finely chopped

½ cupfresh cilantro
chopped

1jalapeño pepper
small, seeded and finely diced

1lemon
juice from, medium, or lime

1 ½ Tbspextra virgin olive oil

2garlic cloves
minced

½ tspground cumin

½ tspchili powder

¼ tspground turmeric
Instructions
Step 1
Mix together the beans, quinoa, corn, bell pepper, mango, onion, cilantro, and jalapeño in a mixing bowl.
Step 2
Whisk together the lemon juice, olive oil, garlic, cumin, chili powder, and turmeric in a small bowl.
Step 3
Drizzle over the mixture and toss.
Step 4
Refrigerate until ready to serve.
