Basil Pesto Pasta with Shrimp

Instructions

Step 1
Place the basil, spinach, garlic, pistachio, lemon juice, feta cheese, parmesan cheese and olive oil into the food processor. Adjust the taste with salt and pepper.

Step 2
Wash, peel and devein your shrimp.
Step 3
Sautรฉ the garlic with avocado oil or your choice of cooking oil and add in the shrimp. Add some paprika and cayenne to add some spice to it and season with salt and pepper.

Step 4
Boil pasta according to instructions on the packaging. Save and set aside 1 cup of pasta water.
Step 5
Saute the sun dried tomatoes for about 1 minute and add in the basil pesto sauce. Toss in your pasta and add 1 cup of pasta water.
