Instructions
Step 1
1. In a small saucepan, heat olive oil and garlic over a medium heat. Sauté until softened, about 1 min. Add tomato paste, stir to combine. Cook for one min. add tomatoes, salt and sugar, whist until tomato paste is fully incorporated. Simmer for 8-10 min until thickened. Set aside

2. Heat large cast iron skillet or griddle to medium heat

3. Butter one side of each of the slices of bread.
Step 4
4. Spread about 2 tbsp of sauce on half the slices of bread. Top with 4 oz worth of cheese, and 4 to 5 basil leaves.
Step 5
5. Drizzle with a little bit of olive oil. Season with salt and pepper. Place other pieces of bread on top.
Step 6
6. Cool in skillet or griddle and cook until golden brown and cheese is melted
