Step 1
Combine tofu, yogurt, 1tsp salt, 1 tsp garlic, and 1 tsp ginger in a large bowl. Stir to blend. Cover and refrigerate 1 hour to overnight.

Step 2
Heat oil in large skillet over medium heat. Add onion and cook 8 minutes or until softened. Add remaining 1 tbsp garlic, remaining 1.5 tsp ginger, tomato paste, remaining 1 tsp salt, and garam masala. Cook and stir 1 min. Add sugar and tomatoes and bring to a simmer. Remove onion mixture and tofu to slow cooker using slotted spoon. Stir to combine.
