Step 1
Heat the oil in a large, heavy based pan and add the onion. Fry gently for 5 minutes until softened then add the garlic and chilli and fry for a further 2 minutes. Stir in the ground cumin then add the tomato puree and chipotle paste. Cook for a minute then add the tomatoes, beans and stock. Simmer gently for 15 minutes until thickened then remove from the heat and season to taste with salt and pepper. Meanwhile, mix together the soured cream and lime zest. Spoon the lime soured cream over the chilli, scatter over the cheese and coriander and serve.
