Instructions
Step 1
Heat olive oil in a large pot over medium head, add onion and garlic and sauté until soft. Add cauliflower florets, carrot, celery and jalapeno.
Step 2
Cook until florets begin to brown. Add broth, tomatoes, bay leaf, cumin, and salt and pepper. Bring to a boil.
Step 3
Reduce heat to low and cook for 20-25 minutes, stirring occasionally until cauliflower is tender. Serve with feta cheese and croutons (optional).
