Instructions
Step 1
In a medium pot, heat broth until simmering
Step 2
While broth is simmering, blend garlic and chipotle peppers in a food processor
Step 3
Whisk paste into simmering broth. Add carrots and cook for 10-15 minutes until carrots are soft. Add in chicken and lime juice. Simmer until chicken is warmed through
Step 4
Salt and pepper to taste, top with cilantro, tortilla chips, avocado, and queso fresco
