For the dressing

Step 1
Pre heat oven to 200°C
Step 2
Cook the rice and leave to cool slightly
Step 3
Cube sweet potato and roast at 200°c for 35-40 mins until soft and caramelised
Step 4
Cook rice.
Step 5
Dice onion, tomatoes and avocado
Step 6
(Optional) Drain sweetcorn and drizzle with oil and salt. Put in oven with sweet potato and roast until charred.
Step 7
Add everything to a large bowl
Step 8
Mix together the dressing (mayo, Chipotle paste, lime, corriander).
Step 9
Pour dressing over bowl and mix everything together.
Step 10
Serve with lime and corriander.
