Firecracker Ground Chicken Bowl

Instructions

Step 1
Cook rice and set aside.
Step 2
Heat a large skillet over medium-high heat and add 1 tbsp olive oil. Once oil is hot, add ground chicken and cook until no longer pink.
Step 3
While chicken is cooking, start on your firecracker sauce. In a mixing bowl add hot sauce, soy sauce, brown sugar, vinegar, honey, garlic powder, and ginger. Mix well and set aside.
Step 4
Once chicken is cooked, add in zucchini and garlic. Mix together and cook for about 5 minutes, or until zucchini is softened.
Step 5
Pour in your firecracker sauce, mix well, cover and let simmer for about 5 minutes.
Step 6
After 5 minutes, taste, and add salt and pepper if required.
Step 7
Portion rice and add grilled chicken on top. Divide out any remaining sauce from the pan. Top with green onions.
