Egg salad pita
Egg mayo is one of those ultimate comfort food fillings that leaves you feeling so satisfied and is actually packed full of good nutrition. A range of essential vitamins, I add an extra hit of protein and lightness through thick yoghurt and jalapeño. It's the perfect creamy, slightly lip-tingling sandwich mix. Once you try this mix, you will never go back. Add in avocado or some peppery rocket.

Step 1
1. Bring a pan of water to a gentle boil. Simmer the eggs for

7 and 1/2 minutes, then plunge them into ice-cold water and leave for 3-5 minutes. Peel. They should be jammy in the middle. Roughly chop and place into a bowl.

2. Mix in the chives, basil, diced jalapeños, brine, salt and pepper, crumbled feta, yoghurt and mustard. Mix well to combine and stuff into a warm pita with a few slices of avocado.
