Step 1
1. In a large skillet cook celery, onion, green pepper and garlic in butter or olive oil till vegetables are tender. Stir in undrained tomatoes, chicken broth, rice, basil or thyme, garlic salt, pepper, hot pepper sauce, and bay leaf. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or till rice is tender.

2. Stir in chicken; cook till heated through. Discard bay leaf. Makes 4 servings.

QUICK COOKED CHICKEN: If you need cooked chicken for a recipe but don't have time to stew a bird, poach some chicken breasts. To get two cups of cubed, cooked chicken, start with two whole medium chicken breasts (about 1-1/2 lbs), halved and skinned, if desired or 3/4 lb skinned and boned chicken breasts. Place the chicken breasts in a large skillet with 1-1/3 cups water. Bring to boiling; reduce heat. Cover and simmer for 18-20 min for breast halves with bones (12-14 min for boneless pieces) or till tender and no longer pink. Drain and cut into cubes.
