For the Salad

1 packagespinach
or greens, chopped

2 cupsstrawberries
sliced

1apple
chopped or sliced

15 ozcanned chickpeas
rinsed and drained

2 tspolive oil

½ tspsalt

¾ cupnuts
chopped

¾ cupfeta cheese

1avocado
optional
For the dressing
Instructions
Step 1
Step 1 Add the spinach, strawberries and chickpeas to a bowl and toss with olive oil and salt.
Step 2
Step 2 Divide the mixture between three meal prep containers and top with feta cheese and nuts. Save the avocado to add it right before eating.
Step 3
Step 3 Make the dressing: add the olive oil, balsamic vinegar, sweetener, salt and pepper to a bowl or measuring glass. Add it to a container and store at room temperature until ready to use!
