Step 1
In a bowl add the flour, salt and yeast (crumbled with your hands). Mix briefly before incorporating the water and making a dough by kneading with your hands for 5-7 minutes
Step 2
Add some olive oil to grease the bowl, mix the dough ball around and cover with a wet kitchen towel. Let rest in a warm place (like the oven turned off) for 6 hours, until a bit more than doubled in size
Step 3
In a small bowl, squeeze the whole tomatoes out of the can. This will be your sauce, there’s no addition necessary
Step 4
Divide the dough into 2 balls after the six hours have passed. Let it rest for 10 minutes and there spread it out on a flour surface. Move it to the oven tray (make sure that you leave a thick crust as that’s characteristic of the pizza napoletana)
Step 5
Preheat the oven to 250°C. Spread a few tbsp of the sauce, 5 or 6 chunks of mozzarella, a couple of basil leaves torn into pieces and a drizzle of olive oil
Step 6
Cook high in the oven for 10 minutes and give it a nice broil at the end for the charring. Let cool down slightly and enjoy!
