Ingredients
4 servings
1 boxchickpea pasta
or other gluten free option like lentil
1 cupsweet bell peppers
chopped
1 cupmushrooms
1 cupcherry tomatoes
halved
1 cupspinach
4chicken sausages
pasture, raised
Pesto Sauce
Instructions
Step 1
Cook pasta according to box instructions - don’t over cook (chickpea pasta tends to cook faster), and drain, reserving some pasta water for pesto if necessary

Sauté chicken sausages in a drizzle of olive oil, and add in peppers, tomatoes, spinach, and mushrooms

Add ingredients for pesto to a blender, food processor, or a hand blender

Add chicken sausage and veggies to cooked pasta and top with pesto sauce!
