Spelt spaghetti with chorizo & mushrooms (low salt low carb)

Low carb doesn’t mean you can’t have pasta. The secret is to load it with fresh veggies, or in this case, spinach and mushroom. It even allows for chorizo and still make it low sodium. The whole family loves this dish! And as usual, I put Parmesan on the table for those who need (are allowed) more salt.

Step 1
Bring a a pot of water to boil. Add the spaghetti and cook until al dente per instructions on the box.

Heat a drizzle of olive oil in a frying pan on high heat. Finely chop the onions and crush the garlic. Add the onion and garlic to the pan and cook until softened. About 2-3 minutes.

Step 3
In the meantime, thinly slice the chorizo. Add to the pan and cook until browned.

Slice the mushrooms, while the chorizo is browning and add to the pan. Stir frequently.

Pick the leaves of the oregano. Add to the sauce and season with black pepper.

Add a tin of crushed tomatoes (no salt added).

Stir everything and let simmer until the spaghetti has cooked.
Step 8
Drain and add the spaghetti and mix everything.
Step 9
Stir through the spinach and cook until wilted. Serve.
