Instructions
Step 1
In a large skillet over med-high heat, heat 1 tbsp of the oil. Add the onion, peppers, and mushrooms, and cook, stirring, until caramelized, 13 to 15 minutes. Remove from heat and transfer to a plate.
Step 2
In the same pan, heat the remaining oil. Season the steak with salt and pepper and cook until browned about 5 minutes.
Step 3
Add the vegetables to the pan and layer the cheese over the top. Cook until the cheese is melted, about 2 minutes. Remove from the heat.
Step 4
Divide among the sandwich rolls and serve.
