Instructions
Step 1
Half fill a large saucepan with water. Put it on the hob on the highest heat. Add a little salt
Step 2
Put the rice in a sieve, wash it under cold water under the tap. Add to the pan. When it boils, turn the pan down so the water is simmering and allow to cook for 15 mins (or however long the pack says) or until soft. When cooked, drain the rice in the sieve. Run the sieve under cold water in the sink until the rice is cold. Drain and put the rice in a large bowl
Step 3
Whilst the rice is cooking….In a small bowl, make the dressing. Put all the dressing ingredients in the bowl, mix together with a fork and pour all over with rice. Ensure all the rice is covered with the dressing
Step 4
On a white chopping, (use a large bowl for your rubbish), chop the pepper, onion and tomatoes. Add to the rice
Step 5
Drain the sweetcorn and beans in the sieve over the sink, add to the rice. Add the hotdogs if using
Step 6
Stir everything together. When serving, add the coriander
