Instructions
Step 1
Put the butter in a small plastic bowl. Put it in the microwave and melt

Sift the flour and baking powder into a large bowl. Stir in the sugar and the salt with a fork. Make a well in the middle

Pour the butter into the well. Ass the eggs and milk.
Step 4
Whisk with the fork until the mixture comes together as a batter. Pour the batter into a jug.
Step 5
Place a frying pan on a medium high hob. Add a little butter (about the size of a fingernail.
Step 6
Pour the batter into a pan. Each pancake should be about 10cm in diameter. Pour as many as will fit into the pan without touching.
Step 7
Leave the pancakes alone. Bubbles will start to form and then burst on the upper surface of the crumpet. Before the upper surface dries, flip it and cook it on the other side until golden brown. About 2-3 mins per side.
Step 8
Continue until all the crumpets are cooked.
