Ingredients

¼ cupNon-fat plain Greek yogurt

2 tspExtra virgin olive oil

0.25Lemon
small, juiced 1 tbsp fresh lemon juice

¼ tspGarlic
minced

1 TbspParsley
fresh, chopped

1 dashBlack pepper

2 x 5 ozChicken canned
premium chunk white, in water, drained

2Whole-wheat tortilla

2 cupBaby spinach

2Cucumber
small, sliced

2Tomato
large, whole, sliced

5.2 ozClementine
2 fruit
Instructions
Step 1
In a small bowl, whisk together all of the dressing ingredients until well combined. Store in a glass jar or airtight container in the fridge for 5 to 7 days.
Step 2
In a small bowl, add the chicken and half of the Green goddess dressing and mix to combine. Spread chicken over the tortilla, top with spinach, cucumber and tomato. Roll to make a wrap. Serve any remaining cucumber and tomato on the side.
Step 3
Store the remaining half of the dressing in an airtight container in the fridge for use later in the week.
Step 4
DESSERT: Enjoy a clementine for dessert.
