Instructions

Step 1
1. Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium-high heat. Fry the onion and the garlic for a few minutes, then add the mince and cook for a few minutes more, breaking the beef up with a wooden spoon, until lightly browned.
Step 2
2. Drain off any fat, then tip the beef mixture into your slow-cooker pot and stir in the chillies, spices, peppers, tomatoes and stock. Cover and cook on high for 5 hours.
Step 3
Add the beans 30 minutes before the end, making sure they're warmed through before serving. Stir well, check the seasoning and scatter over the coriander. Serve hot, with the rice and lime wedges for squeezing.
