Ingredients

low-calorie cooking spray
1onion
large, thinly sliced
2garlic cloves
crushed
500glean beef mince
5% fat or less
2green chillies
deseeded and thinly sliced
2 tspground cumin
1 tspground coriander
1 tsppaprika
cayenne pepper
1yellow pepper
4plum tomatoes
ripe, chopped
300mlbeef stock
hot
400gcan mixed beans
drained and rinsed
fresh coriander
chopped, to serve
rice
Plain boiled
lime wedges
to serve
Instructions
Step 1
1. Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium-high heat. Fry the onion and the garlic for a few minutes, then add the mince and cook for a few minutes more, breaking the beef up with a wooden spoon, until lightly browned.
Step 2
2. Drain off any fat, then tip the beef mixture into your slow-cooker pot and stir in the chillies, spices, peppers, tomatoes and stock. Cover and cook on high for 5 hours.
Step 3
Add the beans 30 minutes before the end,
making sure they're warmed through before
serving. Stir well, check the seasoning and
scatter over the coriander. Serve hot, with the rice and lime wedges for squeezing.
