Instructions

Step 1
Dice the zucchini into 1 cm (1/2 inch) cubes. Thinly slice the garlic. Then in a pan over medium-low heat, add a splash of oil olive and sweat the zucchini and garlic.

Step 2
Season the zucchini and garlic with salt and pepper to release moisture. Cook until starting to turn translucent.

Step 3
Add white wine and let it reduce until almost dry (about 5 min). The zucchini should be completely translucent and softened at this point. Remove from the heat.

Step 4
Blend zucchini and garlic into a paste using a food processor.
Step 5
Combine blended zucchini with chopped parsley, basil, creme fraiche, yogurt, lemon juice, hot honey (optional), and some additional olive oil. Adjust seasoning with salt, pepper, and lemon juice.
