Fabulous Broccoli Cheese Casserole

This is my version of Broccoli Cheese casserole that has evolved over the years from pieces of other Broccoli Cheese casseroles I've tried. It's a great way to get kids (or adults) to eat broccoli.

Instructions

Step 1
Chop broccoli into 1-inch or less pieces and add to a very large mixing bowl.
Step 2
Chop onion into 1-inch pieces, and separate the layers. In a skillet with the butter, sautee the onions for approximately 5 minutes until softened and beginning to turn translucent.
Step 3
Add sauteed onions to the broccoli.
Step 4
Add the condensed soups, rice, cheese, water, and egg to the broccoli and onions. Stir well.
Step 5
Dice the Spam (or ham) into 1/4 inch cubes and add to the broccoli mixture.
Step 6
Remove the seeds from the jalapeno and finely chop. Add to the broccoli mixture
Step 7
Season the mixture with Greek seasoning or salt and pepper to taste. Keep in mind the rice will absorb most of the salt, so be sure to season liberally. Stir the mixture well.
Step 8
Butter a 9x13 inch baking dish and add the mixture to the dish and smooth the top of casserole. Spray a piece of aluminum foil large enough to cover the dish with cooking spray and cover the dish.
Step 9
Bake in a preheated 350 degree oven for 30 minutes. Remove from oven and remove the foil. Sprinkle the remaining cheddar cheese and french fried onions on top. Return to the oven to bake an additional 20-30 minutes without the foil. Enjoy!
