Step 1
Preheat your oven to 350
Step 2
In a 9x12 baking dish, add rice, broth and seasoning. Mix
Step 3
Top with chicken, spinach, rotel and drained black beans
Step 4
Smooth over top, but don’t mix. We want to keep the rice covered by the liquid
Step 5
Top with a block of cream cheese in the middle
Step 6
Bake at 350 for 20 minutes, take it out and stir it until the cream cheese is well incorporated
Step 7
Bake for an additional 10 minutes
Step 8
I like to serve mine with a side of avocado
