Instructions

Step 1
Preheat oven to 375°F (190°C).
Step 2
In a large skillet, cook onions, and garlic over medium heat until soft and translucent.

Stir in bell peppers, uncooked rice, broth, diced tomatoes, salt, pepper, and Italian seasoning. Bring to a boil.
Step 4
Reduce heat and simmer uncovered for 25 minutes, or until rice is cooked.
Step 5
Transfer the mixture to a baking dish. Top with cheddar and mozzarella cheese.
Step 6
Bake in preheated oven for 15-20 minutes until the cheese is bubbly and golden brown.
Step 7
Let stand for 5 minutes before serving.
