Crispy Butter Chicken Burger

Instructions

Garlic Naan Buns

Step 1
Mix the water yeast and sugar and let sit for 10 minutes
Step 2
Combine the flour, salt, yogurt and nigella seeds in a large bowl
Step 3
Add into a stand mixer and let run for 10 minutes til you have a dough that’s slightly sticky to the touch
Step 4
Add a tbsp of oil to a bowl, dip your hands and rub them with oil so you can handle the dough without it sticking too much
Step 5
Pick up the dough and stretch it back around on itself to get a plump ball, pinching it underneath
Step 6
Lay in the bowl flipping all round to coat the sides of the dough in oil
Step 7
Leave in bowl covered with cling film in the fridge overnight
Step 8
The next day, cut into 4, form into tight balls and set on a floured tray covered with cling film for 1-2 hours til doubled in size
Step 9
Either cook in a pizza oven at 350-400C for 60 seconds, or in a conventional oven (preferably with grill setting) on max temp for 5-6 minutes
Step 10
Mince the garlic and finely chop the coriander and add melted butter, olive oil and salt
Step 11
Brush over the top of the naans and flick them back in to cook for 12 seconds in pizza oven or 1 minute in normal oven and they’re good to go!

Butter Chicken Curry Sauce

Dice and fry the onions over a medium heat for 5 minutes before adding the diced garlic and ginger for 2 minutes

Add the salt, and spices then the tomato purée for 2 minutes before adding the chopped tomatoes, stock, ketchup, mango chutney and cashew nuts then simmer for 1-2 hours or slow cook on high for 2 minutes

Blend it up before adding the double cream, fenugreek, and more butter to cook for 10 minutes

Tikka Fried Chicken

Mix the spices salt and MSG together and add half to the yogurt along with the juice of a lemon
Step 16
Bash the chicken breasts to an even 1 munch thickness then dip them all into the marinade, cover, and set aside for at least an hour or overnight

Mix the flour, cornflour, and the remainder of the spices, dip the chicken and fry in sunflower oil at 160C for 7-8 minutes
Step 18
Drain the oil and toss in the butter chicken sauce the loaf onto your burger with some crunchy bits and get stuck in!
