One pot Fridge clean out pasta
A very flexible pasta dish that is meatless and can be vegan if desired. Use any veggies you need to use up. I used frozen tomatoes but canned also works. Nutritional yeast and cheese both optional

Step 1
In 1 tbsp oil, Sauté chopped onion and veggies a few minutes. Add pressed garlic & cook a few minutes. Add tomato paste and dried spices, cook a minute then add maple syrup. Add pasta and water and bouillon and cover m. Reduce heat and cook until Al dente. Mix in nutritional yeast OR cheese OR both OR neither- it all works!
