Bacon Enoki Rolls in Alfredo Sauce

Ingredients

Bacon Enoki Rolls
Alfredo
1 cupheavy cream
3garlic cloves
minced
½ tspgarlic powder
½ tsponion powder
½ tspblack pepper
½ tspitalian seasoning
¼ tspsalt
1 cupparmesan cheese
parsley
to garnish
½ cupshredded mozzarella cheese

Instructions
Step 1
In a pot with boiling water, cook your pasta according to the package’s instructions.
Step 2
Remove and drain the pasta. Reserve about 3 tbsp of the pasta water. Set this aside.
Step 3
Slice 4 strips of bacon in half, making 8 slices of bacon.
Step 4
Cut the base of the enoki mushrooms, keeping them attached. Remove the roots and break them into smaller pieces. Ensure that each section remains intact.
Step 5
To make the bacon enoki rolls, start by laying out a slice of bacon on a clean surface. Then, place one section of enoki mushroom on top of the bacon slice. Roll the bacon tightly around the enoki until it's wrapped evenly. Repeat these steps for the remaining slices of bacon.
Step 6
In a pan over medium low heat, carefully place each bacon enoki roll on the pan and cook both sides for ~5-6 mins each or until the bacon has browned and is slightly crispy. The bacon fat should render leaving a good amount of grease in the pan.
Step 7
Remove the bacon enoki rolls from the pan, leaving the residual bacon fat.
Step 8
Add minced garlic and sauté for 60 seconds.
Step 9
Add the heavy cream and season with garlic powder, onion powder, Italian seasoning, salt and pepper. Mix to combine.
Step 10
Mix in the parmesan cheese until it completely melts into the sauce. Cook until the sauce thickens.
Step 11
Reintroduce the bacon enoki rolls into the sauce and let them cook in the sauce for 5-6 minutes.
Step 12
Top with mozzarella cheese and allow for it to melt. Add the saved pasta water to loosen the sauce if needed.
Step 13
Garnish with dried parsley flakes and serve with pasta.
