chicken tenderloins
mexican rice
tomato paste
chicken broth
3 tablespoonsolive oil
3 tablespoonsflour
whole wheat flour, all-purpose flour and gluten-free flour blends all work
1 tablespoonground chili powder
scale back if you’re sensitive to spice or using particularly spicy chili powder
1 teaspoonground cumin
½ teaspoongarlic powder
¼ teaspoondried oregano
¼ teaspoonsalt
to taste
cinnamon
optional but recommended
shredded cheese
Tortilla shell
Instructions
Step 1
Cook and shred chicken
Combine all spices
Heat oil
Add spices, tomato paste, and broth
Stir until combined and cook for 7 minutes
Add 1/4 cup sauce to chicken
Roll chicken and some cheese in shells and lay in pan
Cover with sauce and cheese
Bake at 350 for 20 minutes
