Spring Green Quinoa Bowl
Spring Green Quinoa Bowl
This super green bowl is full of goodness and perfect for an easy lunch!
Serves 1-2:
40g feta
100g cooked quinoa
1/2 avocado
1/4 cucumber
5 asparagus spears
Small handful of green beans
1tsp capers
Small handful of fresh dill and parsley, chopped
Juice of 1/2 lemon
10ml extra virgin olive oil
Chop and blanch the green beans and asparagus in boiling salted water for 1 minute. Drain then put into iced water to keep the green colour of the veggies.
Cook quinoa to packet instructions, I use the microwave packets for quicker prep.
Chop the cucumber and herbs, crumble the feta. Assemble the bowl with all of the ingredients and dress the salad with fresh lemon juice and EVOO. Enjoy!
