Garden Quesadillas

I love to forage for every meal, and that’s what inspired me for these beautiful, crunchy and delicious quesadillas. You will need a batch of Native Eats gluten-free flour tortillas. See that recipe next.. this recipe doesn’t give exact measurements because you can make as many tortillas or with as much vegetables as you desire. You can also substitute for any other vegetables you wish this is what I had available in my garden and in my fridge.

Instructions

Step 1
Chop up all your veggies. Heat a skillet to medium and spray with avocado oil. Once hot, add a tortilla, cheese, veggies, more cheese, hot sauce, another tortilla brown to desired doneness then flip with a large spatula. Cook a couple minutes on each side. Rest quesadilla on parchment paper on a cutting board, cut into 4.
