Step 1
Soak porcini mushrooms in 1 c boiled water
Step 2
Place leeks and cremini mushrooms in a large saucepan over medium heat for 10 minutes. Add one or two tablespoons of water to prevent sticking.
Step 3
Combine porcini mushrooms and vegetable broth adding enough liquid to equal 3 cups. Add the mushrooms and liquids to the saucepan along with quinoa and bring to a boil. Lower heat and cook for 15 minutes. Then stir in spinach and continue cooking for 5 more minutes.
Step 4
Divide into four bowls and sprinkle with pine nuts. Serve immediately.
