MUSHROOM CHOW MEIN:
This ticks a few boxes 😉 It’s cheap at under £1 per serving ✔️ It’s meat free ✔️ It’s easy and quick to prepare ✔️ and it’s tasty ✔️
SERVES 2:
🥡 Prepare your egg noodles as per instructions. Top tip at end of caption!
🥡 In a bowl make your sauce by mixing 2 tsp light soy sauce, 2 tsp dark soy sauce, 3 tbsp oyster sauce, 1 tsp sesame oil and a pinch of pepper.
🥡 Heat your wok add 2 tbsp oil and add 250g sliced mushrooms (chestnut work well) and cook stir frying for 3-4 minutes. Add 1/2 finely sliced onion, 2 minced garlic cloves and cook until the water from the mushrooms has evaporated.
🥡 Add the drained noodles, the sauce and 3 spring onions sliced to inch long pieces. Combine everything together over a high heat for 30-40 seconds. Serve and enjoy 😉
TOP TIP 📝 When you drain your noodles run them under cold water for a few seconds and drizzle with a little sesame oil. This will stop them sticking together 👍
