Hot Pink Beet & Mint Pasta (vegan & delicious!)
Everyone has been making the Barbie pasta lately! I've actually been making this recipe for years! It's completely dairy free but this is so creamy rich and flavorful. My secret is topping with fresh mint which pairs so well with the sweetness of the beets. Plus it's super heart healthy and a beautiful dish. Enjoy!

Instructions
Step 1
Start by bringing a pot of salted water to a boil and cook your pasta according to package instructions. Reserve some pasta water for the end.
Step 2
Add all ingredients for the pink beet sauce to a blender and blend until smooth.
Step 3
Once your pasta is cooked, add your sauce and pasta with some of the pasta water to a sauté pan and mix on a low-medium heat until well combined.
Step 4
Top with fresh mint, grated Brazil nuts and fresh cracked pepper.
