Step 1
Thinly slice cucumbers (with skin on). Mix with salt and let sit and “weep” out moisture for 30 minutes to dry out. Then rinse out salt (do a few rinses) and pat dry. Taste to make sure not too salty. Place in new bowl. Add sugar, vinegar and diced pepper. Keep in refrigerator and allow to marinate.
Step 2
If too sweet, add more vinegar; if too tart, add more sugar.
