60gred bell pepper

Instructions
Tofu marinated
Step 1
Remove firm tofu from its package, drain and pat dry with a paper towel then freeze them overnight.

Thaw the tofu and squeeze the water. Be gentle with this step as the tofu 'sponge' can be quite delicate.
Step 3
Cut the tofu into pieces, then marinate tofu with salt, pepper and rub them with cornstarch.

Step 4
Coat tofu with another layer of cornstarch and slowly place the tofu in the hot oil and stir fry until golden brown on all sides. Stirring from time to time. When it is cooked, take it out of the pan.

In a heated non-stick pan, add 2 tsps of oil and stir fry the bell pepper for about 1-2 minutes. Take them out and set aside.

Using the same pan, add in the water with cornstarch, ketchup, rice vinegar, sugar, lemon juice, and salt. Bring the mixture to a rolling boil while stirring continuously. Then, lower to simmer and cook until the sauce is slightly thickened.

Add the pineapple and fried pepper, stir to combine, then cook for about 30 seconds.

Add tofu and toss everything together until well combined and season with salt.

Serve warm with rice
