Instructions

Step 1
1. Boil the tomatoes, 1/4 white onion, 3 garlic cloves, and chiles for 8-10 minutes or until the chiles are smooth and the tomato skin has slightly blistered. Reserve 1/2 cup of water.

2. While those are boiling in a seperate pan add nopales, 1/4 of the onion, garlic clove, tomatillo skin, and salt to a pan over medium heat.

3. Cook for 10-12 minutes or until nopales are dark green in color. Stir occasionally.

4. Add the cooked nopales into a colander and rinse with cold water. Make sure there is no “baba.”

6. Once chiles and vegetables are cool, add to a blender with seasonings to taste (chicken bouillon) and the reserved water. Blend and put to the side.

7. Grease a pan with avocado oil spray and add beef. Cover and cook for 8 minutes, stirring occasionally.

8. Once the beef is cooked, add in the onion and seasonings to taste (salt and pepper). Cook for 2-3 mins or until the onion are translucent.
Step 9
9. Bring the heat down to low. Add in the nopales and salsa roja. Cover and cook for 10-15 minutes.
Step 10
10. Divide into 4 even servings (.75 cup beef mixture) and add side of choice (.75 c frijoles).
