Step 1
Cook the pasta
Step 2
While pasta cooks add cottage cheese, salsa, chilies and taco seasoning to a blender and blend until smooth
Step 3
Lightly spray a pan with non stick cooking spray and Sauté spinach until wilted
Step 4
Once pasta is done take two table spoons pasta water and add to the cheese mixture
Step 5
Add cooked chicken to the spinach just to warm it up for a minute or two
Step 6
Combine pasta and sauce with chicken and spinach and stir until melted and creamy
Step 7
Now throw it in a bowl and enjoy!
