Ingredients

2 x 15 ozchickpeas
cans, drained and rinsed
1 cupcucumber
diced
1 cupcherry tomatoes
halved
½ cupred bell pepper
diced
ÂĽ cupred onion
finely chopped
½ cupkalamata olives
pitted and halved
½ cupfeta cheese crumbled
ÂĽ cupfresh parsley
chopped
1juice of lemon
3 tablespoonsextra-virgin olive oil
salt
to taste
pepper
to taste
Instructions
Step 1
n a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, olives, feta cheese, and fresh parsley.
Step 2
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Step 3
Pour the dressing over the salad and toss to combine.
Step 4
Taste and adjust seasoning if needed.
Step 5
Serve the Mediterranean chickpea salad as a side or a light meal.
