Instructions
Step 1
Strip the kernels from 3 ears of corn. Pat dry.
Step 2
Transfer the kernels to a large bowl and add remaining ingredients
Step 3
Stir to combine. If dry, add extra egg whites
Step 4
Heat 1 TBS of olive oil over medium/high heat. Drop spoonfuls of the batter into the skillet and cook for 1-2 minutes on each side until golden brown and crispy. Place on paper towels until ready to serve
Step 5
Great on its own or with tzatziki, squeeze of lime, or hot sauce
